Live Rock Lobster, also known as Spiny Lobster or Bamboo Lobster, is a species of lobster found in warm/tropical waters. Wild caught from Indonesia.
Its appearance is marked by its bright spotted colouring and long, stiff antenna.
Unlike the Boston/Maine Lobster, live Rock Lobster do not have large edible claws, so its medium sweet, snowy white flesh with delicate flavour is mainly found in the lobster tail. Its body and legs are often used to create a rich lobster broth used in lobster porridge or ramen.
