Live Rock Lobster 活竹龙虾
Live Rock Lobster, also known as Spiny Lobster or Bamboo Lobster, is a species of lobster found in warm/tropical waters. Wild caught from Indonesia.
Its appearance is marked by its bright spotted colouring and long, stiff antenna.
Unlike the Boston/Maine Lobster, live Rock Lobster do not have large edible claws, so its medium sweet, snowy white flesh with delicate flavour is mainly found in the lobster tail. Its body and legs are often used to create a rich lobster broth used in lobster porridge or ramen.

“Very happy with purchase, really good, fantastic, second buy in a week!”
Tip: Brush with oil or butter before and during grilling/roasting to ensure that the meat does not dry out. Avoid overcooking rock lobster – this will result in a very dry, chalky and tough texture.

How to Clean & Tenderise Live Abalone (View Video)
Use a knife to gently pry the abalone meat from the shell. Trim off the dark brown liver & dark curly edges. Scrub it with a clean toothbrush. To tenderise the abalone, gently pound both sides with a mallet or back of large spoon. Stop when it feels noticeably softer to the touch. Cook as desired.
