Live Turbot Fish is a thin flatfish, well regarded as the noblest and best of all flatfishes.
Highly prized in Chinese, French & European cuisines, Turbot fish flesh has a firm texture with an excellent mild flavour. Commonly compared to Halibut, Turbot has a more pronounced taste, requiring little seasoning to enhance its flavour.
Each Turbot yields 4 fillets.

How to Clean & Tenderise Live Abalone (View Video)
Use a knife to gently pry the abalone meat from the shell. Trim off the dark brown liver & dark curly edges. Scrub it with a clean toothbrush. To tenderise the abalone, gently pound both sides with a mallet or back of large spoon. Stop when it feels noticeably softer to the touch. Cook as desired.
